Tasteful Tuesday: Comfort Edition

As cooler temps descend on the Triangle area, cravings turn towards comfort. Cider, soups and pumpkin-spiced-everything beckon palettes as tastebuds long for the flavors of Fall.

I tend to err on the side of healthy eating – greens, fresh produce, lean meats, healthy fats. But what to do when comfort comes calling?!

The Answer: Spicy Almond & Chicken Stew

My sister introduced me to this new family favorite last week. Among many things, Corinne is a fantastic cook with a discerning palette to boot. This soup is creamy without cream, cozy without empty calories, and all-around-scrumptuous. Apples. Sweet potato. Kale. Chicken. Corinne added chipotle powder to round out the recipe with back-end spice. All in a stewy almond butter broth that tastes like a warm hug on a cold winter day. It’ll snuggle your tastebuds to a smile!

So get out your soupware, load up on fresh ingredients, and prepare to be deliciously comforted. This is one soup that will have everyone begging, “Please, sir, may I have some more?!”
